This is my first attempt at making the stunning Japanese confectionery known as Wagashi!
I was enamored with these gorgeous nibbles on my adventures around Japan. Not only are they very pretty, but they are a harmonious (and rather healthy!) sweet treat to be enjoyed with matcha.
Wagashi are vegan, gluten free and not as sweet as my other loves; macaron 😝 Traditionally these confectioneries are served at traditional Japanese tea ceremonies- I feel very honoured to be able to try and make such a treasured gastronomic tradition at home!

I have been conducting how to bake Macaron classes!
Come learn the art of baking the epically temperamental & finickety cookies known as MACARON! (Mac-A-Ron not macaroons ladies & gents- those dem things are coconut lumps dipped in chocolate)
My class is 4.5 hours & by the end of it participants will have the skills & knowledge to:
• compile all the necessary cooking equipment, materials and ingredients to bake macaron
• make Italian method macaron
• know how to spot factors in your batches which influence the outcome & quality of your macs
• expertly macaronage
• pipe and fill your macaron!
I’m a walking talking baking encyclopedia which you have full access to during and post class. Over the duration of the course I share my tips & hacks about macs & baking so that fear is not an ingredient in creating these treats!
I also share my prized & guarded; refined and faithful recipe that I have tweaked and lovingly compiled over my years of baking macs and a circle template
